Sometimes things just happen to work out the way they did for this board, I am always looking for quick and easy recipes and this is one of them. We had both a classic caprese and added a crostini, blueberry and lemon appetizer. The new blueberry lemon crostini blew me out of the water and I hope you love it just as much as we did.
Thick slices of mozzarella cheese
topped with basil, balsamic glaze & cracked salt and pepper
Blueberry and Lemon Goat Cheese Crostini
First start by whipping the goat cheese with heavy cream dash of salt and set aside
Next, in a bowl, mix the blueberries, lemon zest, lemon juice and thyme tossing until combined.
Last you can either toast your crostini's or just simply cut and top with the goat cheese mix and on top the blueberry, lemon mixture. Top with a balsamic oil and sprinkle of fresh thyme leaves. Voila!
8 oz. goat cheese
1/2 cup heavy cream
dash of salt
10 ounces blueberries
zest of one lemon
tablespoon lemon juice
one tablespoon chopped fresh thyme
