Berry Spring Day


How amazing is the feeling of spring?! Here in Utah we still get some cold days but when it starts to warm up everything feels like it is coming back to life and the creative juices start flowing again, do you agree? To bring this feeling alive I wanted to do an all berry themed board perfect for spring and for a bridal or baby shower or even a girls night get together.
This berry salad is the easiest salad you will ever throw together with the most simple but tasteful dressing and looks amazing on the 18 inch Harvest Board. My favorite thing about this salad is you can throw a variety of ingredients in it, I like to add avocados or chicken if I want it to be more hearty for a main course.
A delicious side to go with this salad is our favorite artisan bread, I make this at least once a week and it takes no time at all and even better every one is impressed and loves warm home made bread. It would be beautiful to add to the corners of your board also with a bowl of butter on the side. 
The strawberry cake is a labor of love and most definitely optional, in the past it has always been a favorite. I will tag the recipe here from Cake by Courtney. If you want to make things simple an angel food cake with whipped cream and sliced strawberries would pair well or even some strawberry ice cream. 
This strawberry lemonade from Trader Joe's is also a favorite of ours. If we are throwing a get together I always grab a couple of these lemonades to add some fun to the set up, they are so pretty and yummy. 
With this exact set up I made the cake the day before and then I would start the artisan bread in the morning to bake just before the party starts. Other then the baking this set up took less than five minutes and looks so beautiful and springy! I hope you will use this salad and love it, recipe below!

 

Berry Salad
Serves 6-8
two bags or heads of red leaf lettuce 
one case of strawberries
one case of blueberries
one case of raspberries
goat or feta cheese 
sugared walnuts 
optional: shredded chicken or avocado 
Dressing: makes a lot so a good option is to half it
2 c. sugar
2 tsp. salt
3 T. dried onion flakes
2 tsp. dried mustard
1 c. red wine vinegar
2 tsp. poppy seeds
1 1/2 c. oil 

Mix together and serve.
